The One Week Challenge-Day 3

thank you everyone except ryan for the moral support! hmph. going to new york sounds great like fun especially at this time of year when the christmas decorations are starting to go up. they are free to look at! hitchhiking does not sound like as much fun, but you can take the megabus for $1. then i could hang out with all the bums at port authority who are, um, doing free things, too...

unfortunately yesterday I did make a purchase: a small latte for $2.85. now i have to give $21 to charity. I also spent $30 at the post office mailing an application. argh! that is where the money goes.

last night when I came home it was an interesting challenge to make dinner without buying groceries this week. this was my cheap let's-eat-what's-in-the-fridge dinner:

pinto bean soup with garlic, onions and celery
polenta
laughing cow lite cheese
an apple

it wasn't bad!

do you have any cheap meal ideas? i also have lots of chickpeas, and a gigantic butternut squash...what would you make with what's in your fridge right now?

I like garbanzo salad with lots of vinegar and any crunchy vegetables. You can put tuna in it. My fridge is not like yours--little and easy to see. Who knows what is in there. This is a good thing to do to help your budget. It is giving you lots of information.
